Happy Tuesday!!!

My love for Mexican food is so real. So the thought of Taco Tuesday always makes me smile. My DH always makes fun of my love for tacos cause I can really eat them every week without frowning. Mi familia on the other hand not so much. My mini me is more like me, she can get down with some cheese dip and soft tacos pretty much whenever it’s cooked. Taco salads, tacos, cheese dip, dorito casserole, fajitas, quesadillas and so on…

Thanks to my very own personal chef and hubby, just about anything I can conjure up in my head can become reality on a plate. From Italian, Mexican, Creole, and basically anything from all regions imaginable he can make it happen. I always tell him when he started to showcase his amazing cooking skills is when I gained boo-coup pounds. Am I complaining? Uh no… The food is just too dang good to complain about.

So without further ado let me breakdown one of my other favorites. This dish I was obsessed with when I was pregnant with my youngest. Getting so sick and tired of attempting at ordering the dish from various restaurants, DH took it upon himself to make it for me. Bless his heart… I’m pretty sure he just got tired of me complaining about paying for crap. On his first attempt, he knocked it out of the park. Here is the recipe he used below. Surprisingly he gave me permission to share it. LOL…

Cajun Shrimp/Chicken Alfredo

Ingredients:
1 pkg. Fettuccine Noodles

1 – lb. Shrimp peeled and deveined
or 3 boneless skinless chicken breasts

Cajun seasonings of choice

Alfredo Sauce:
1 – pt. whipping cream

4 tbls of butter

3/4 cup of grated parmesan cheese

Salt and pepper to taste

Directions:
Add noodles to a pot of boiling water (add olive oil or butter to stop noodles from sticking). Take shrimp and/or chicken season to your liking and place in skillet at medium temp. Cook thoroughly.

Sauce:
On low heat add butter, when it is almost totally melted gradually add cream (if you want your sauce to be a little thicker and creamer gradually add 1/4 cup of flour) once the cream is added continually stir sauce so it will not burn, after 4 to 6 mins pull off burner then add your parmesan cheese, don’t forget to keep stirring, once cheese is melted you may season to your liking.

Completion:
Drain your noodles and place in a skillet. Combine meat and sauce in the skillet continue to cook on medium heat stirring continuously. Once everything is combined, plate it, and garnish with a little basil or parsley. Serve.
